September Happenings

I can't believe it is already September (well, tomorrow it is :)

Here are a few things we have planned for the month!
  • The 65 Annual County Fair.
  • Labor Day= Day off from work!
  • Shopping trip to the Lake with Malinda!
  • Monthly church dinner.
  • Our 2nd Anniversary!!!
  • A friend's Wedding.
  • The Visitation Fall Dinner.

I think it will be a good month :)

Books, Books & More Books!

Here are the books I found at the book sale yesterday!! Added to the books Tyler already has (the ones I got from last years book sale), he is stocked up on books now!! :)

Homemade Chicken & Noodles

Last night I made homemade chicken & noodles for dinner! They were delicious! I didn't have time to make homemade noodles this time, maybe next time! :)
I always loved the chicken & noodles at school- actually, I loved all the school lunches. I never knew why people didn't like the food at school.

Tyler even got to try some that was put through a food processor! He liked it!
Yum!

He is such a good eater!



Homemade Chicken & Noodles
Recipe: By Me :)
-I boiled 1 pkg of chicken thighs (about 2 lbs) -pull chicken off the bones and set aside.
-Boil about 2 cups of water, add chicken & noodles. (as many noodles as you want- I am horrible at not cooking enough or cooking too much dry pasta!-lol)
-cook until noodles are done.
-add 2 cans cream of chicken soup, and sprinkle some parsley flakes, salt & pepper.

I can't wait till lunch- because I brought some leftovers :)

Randoms!

* I made ice cream cake & taco dip today for a food day here at work! I love carry in dinners & snack days!

* The fair is this weekend (& Labor Day), which is a sign that summer is almost officially over. It was a fast summer..

* Even though it is sad to see summer come to an end, I am ready to get my fall decorations out. Fall is my favorite season!

* On Labor Day, Malinda and I are going to the Lake to do some shopping. Basically just to get Tyler some fall/winter clothes.

* Tonight I am going to the book sale again.

* Not too much else going on here lately! Just enjoying life! :)

Weekend Recap

Friday- Mom, Tyler and I walked/strolled around town. The weather was perfect! Matt went down to the cabin to hang out w/ his friends for a while.

Saturday- Matt had to work on a project at work- which they got finished- with no problems..yay!
So that meant, Tyler and I had the day to ourselves! That morning I went to copy pictures, went to the book sale in town, and visited with Mom and Malinda. And we played around the house all afternoon! It was a good day-even though we did miss Matt :)
That evening Matt went to the cabin again, and we all had tacos at Mom and Dad's house. It was a good time!

Sunday- I went to church that morning, did my grocery shopping, and then we headed over to Linn to go through some clothes from Matt's cousin. We got a big bag full, and some really cute outfits, and the best thing is that they were free!! -Thanks Laura! On the way back we stopped to visit with Ron & Liz.
That evening I came into town to have Malinda take some 6 month pictures of Tyler with my camera. We got some taken a couple of weeks ago, but I didn't have any props with me, and I wanted to get some creative ones. I will post the ones we took later today, we are going to try to take some more some night this week, because it was just Malinda and I there, we needed more help getting him to smile. Thanks Malinda for taking them!! :))

Lasagna Rolls & Banana Bread

Here is the recipe for my lasagna rolls & for the banana bread I made for Karen & Grandma last week. They have recipes for the lasagna rolls online, but I kind of made it up as I went along. And it turned out a success!

You can't really tell it is a roll from the picture. But they surprisingly rolled really easily.
Lasagna Rolls

(all measurements are approximates)
12 lasagna noodles- cook and drain
1 24 oz container cottage cheese, 3 eggs, sprinkle of parsley flakes, 1/2 c parmesan cheese- mix together and set aside.
1 lb ground beef- cook & drain
-mix in 1 can tomato paste, and 1 can tomato sauce, a sprinkle of garlic powder, and about 1/2 cup water.
-lay out noodles and fill each noodle with both mixtures and sprinkle mozzarella cheese also, then roll up the noodles. Place in baking dish. Bake for about 30-35 minutes @ 350 degrees. I had leftovers of both mixtures & mozzarella cheese, so I spread the rest over the noodles.

Banana Bread
Recipe from: Better Homes & Gardens

1 1/4 cups sugar
1/2 cup butter or margarine, softened
2 eggs
1 1/2 cups mashed very ripe bananas (3 to 4 medium)
1/2 cup buttermilk
1 teaspoon vanilla
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped nuts, if desired, (I left out the nuts)

Move oven rack to low position so that tops of pans will be in center of oven. Heat oven to 350°F. Grease bottoms only of 2 loaf pans, 8 1/2x4 1/2x2 1/2 inches, or 1 loaf pan, 9x5x3 inches.
Mix sugar and butter in large bowl. Stir in eggs until well blended. Add bananas, buttermilk and vanilla. Beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in nuts. Pour into pans.
Bake 8-inch loaves about 1 hour, 9-inch loaf about 1 1/4 hours, or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans and place top side up on wire rack. Cool completely, about 2 hours, before slicing. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.

I recently discovered the 'picnik' website everyone is talking about. I edited a couple of random pictures from my computer. They aren't that much different, but I'm not into the borders, and all that stuff. I plan on editing more pictures soon!

Relaxing

Tippy is our oldest cat. And as you can tell, she doesn't really take care of herself anymore. Truth be told, she probably needs to be put down. But that is a hard thing to do to a cat that was pretty much like a child/sibling.

She usually just spends the days laying around the house. The other day when I was down at Mom's she was laying in this position. I thought it looked cute !!
What a good kitty she has been !

Randoms

* Matt has been working crazy overtime lately. Which is too bad, because he misses out on seeing Tyler. I guess at least he has a good job, so we can't complain too much. And it is only temporary, until they get a problem figured out. I'm glad it won't last forever!

* Tonight, Mom is going to come out and watch Tyler while I push mow the lawn. We skipped mowing it this weekend, because we were too busy. I am looking forward to getting a walk in & getting something done at the same time!!

* We said bye to Grandma last night. It was sad, but as she always says, 'it is never goodbye'..which couldn't be more true.
Malinda and I put together a photo album full of photos from when she was here, and some extras of Tyler. I also made her and Karen a loaf of banana bread for breakfast.
We are already looking forward to her next visit :)

* Speaking of copying pictures...I kind of miss the days of film. Now that I have a digital camera, it seems like I never get the pictures developed. Last night, I updated my fridge last night with some extra ones I copied for Grandam- which was way overdue!. And then today or tomorrow I am going to go get some more copied for a few other people.

* Tyler's birth announcements arrived yesterday!! And we Love them!! I will post a picture later!

* Matt's friends all get together one weekend every year and go down to a cabin and spend the weekend there. It is this weekend. I hope Matt can make it to most of it!!

* For dinner, I am making Lasagna Rolls...I'll fill you in tomorrow to let you know how it goes!!

Dinner @ Malinda's House

I am a couple days late..but on Monday we had dinner at Malinda and Mat's house. Mat made steak and grilled shrimp. Malinda made potato salad, and a garden salad for sides, and then chocolate mousse for dessert (a family favorite). It was all very good and we loved having Grandma there for company :)
