CPK's BBQ Chicken Pizza

Last night for dinner I made BBQ Chicken Pizza. I have tried it in the box by California Pizza Kitchen, and loved it! I found this on the Pioneer Woman's site and just had to try it!




I was noted earlier in my 'randoms' that I was going to make ranch chicken, but I didn't realize that I had to marinate the chicken, so that will have to wait for another night :)




CPK’s BBQ Chicken Pizza





Ingredients

1 whole Recipe For Pizza Crust (mine Makes Two Crusts)
2 whole Boneless, Skinless Chicken Breasts



1/2 cup Barbecue Sauce



Olive Oil, For Drizzling



Salt For Sprinkling



16 ounces, weight Fresh Mozzarella Cheese, Sliced Thinly



1/2 whole Red Onion, Cut In Half And Sliced Very Thin



Chopped Cilantro, to taste



Preparation Instructions





Preheat oven to 375 degrees.



Salt chicken breasts on both sides, then place in an ovenproof dish. Pour BBQ sauce over the breasts and turn them over to coat. Bake for 20 to 25 minutes, or until chicken is done. Remove from oven and cut into a fine dice. Set aside.



Increase oven temperature to 500 degrees.



Roll/stretch out one pizza crust. Lay it on a sheet pan drizzled with olive oil. Drizzle a little olive oil on the crust, then sprinkle on a little salt.



Spoon a couple of tablespoons of extra BBQ sauce on the crust and spread it evenly. Top sauce with half the sliced mozzarella. Sprinkle on half the diced chicken and thinly sliced red onion.



Sprinkle again with a little salt, then bake for 15 to 17 minutes, or until crust is golden brown and toppings are bubbly.



Remove from the oven and sprinkle on plenty of chopped cilantro. Cut into squares and serve immediately. Repeat with other crust and other ingredients, or save for another time.


We all loved the pizza.. but next time I'm leaving out the cilantro. It sure made it look great, but it tasted horrible!

** Tyler's 18 month checkup!

** Our card workshop!

** Russell House fundraiser at the Eagles. I probably won't work it this year, but I have a list of baked goods to make!

Weekend Plans

Tonight- I am going to make cake balls for my nephews birthday party!

Saturday- Matt has to work that morning, so Tyler and I will probably spend the morning playing!
That evening, we have Jake's 1st birthday party! I am making twice baked potatoes & a salad that afternoon for it. After his party, I'm going to an old classmates wedding dance.

Sunday- No plans!

Thursday Thirteen

This week's topic: Celebrities/Musicians I think I wouldn't mind dating- well, before I met Matt of course :) haha

1. Kurt Cobain. I love long hair on guys. And he looked so hot behind the mic!


2. Phil Anselmo (aka: lead singer of Pantera). Not many people like him, but I love his bad boy look!




3. Josh Todd (aka: lead singer of Buckcherry). Aren't you glad I didn't bring a guy like him home, Mom?! :)






4. Pauly D. I am so excited for the new season of Jersey Shore!!




5. Sully Erna (lead singer of Godsmack). Again, I love the bad boys!




6. Jay Hernandez. I had a huge crush on him when he was in Crazy/Beautiful.



7. Channing Tatum. Do I need to even explain this one?!



8. James Van Der Beed. He is almost a little too preppy for me. The only thing I really remember him by is Dawson's Creek, which was a little too sappy for me. But he's still cute!


9. Matthew McConaughey. I loved him in "How to loose a guy in 10 days"!!


10. David Beckham. If you say you don't think he is hot, you're lying!


11. Kevin Costner. Everything is better with age I guess! He is one of the reasons I used to love to watch Field of Dreams!

12. Mark Wahlberg. The first movie I saw him in was FEAR. Ever since then I've loved him. And he's even hotter now!






13. Johnny Depp. My all time favorite. I don't know what it is about him, but he's amazing!!

Monkey Muffins


I found this recipe on the Pioneer Woman's site. I had some biscuits that needed used up, so I decided to go ahead and try it. They were sooo easy to make- and tasted great too! I made two pans so I could give one to mom & dad. I think they liked them too!

It's a good recipe to try with kids too. In a year or so, Tyler will be helping me make them I bet :)



Monkey Muffins




Recipe by: The Pioneer Woman











Ingredients



  • Leftover Bread Dough (or Refrigerated Biscuit Dough, Cut Into Thirds)


  • Butter


  • Sugar


  • Ground Cinnamon


  • Sweetened, Condensed Milk



Preparation Instructions



Preheat oven to 375 degrees.


Add 1/2 teaspoon butter to muffin tins. Sprinkle in sugar and cinnamon.


Roll dough into walnut sized balls (or cut refrigerated biscuit dough into thirds). Place three into each muffin tin.


Top with 1/2 teaspoon butter. Sprinkle on more sugar and cinnamon.


Allow dough to rise, if applicable, or just go ahead and bake for 15 minutes, or until golden and bubbly.


Remove from oven and immediately drizzle plenty of sweetened condensed milk over the top of each one. Be generous! Allow rolls to sit for a little while to absorb sweet, sticky milk.

Randoms

** Tonight, after work, us girls + Tyler are going to go swimming at the river, and then having taco night at mom's house! Needless to say, I'm ready for 4:00!

** I did some weed eating last night. The weeds have kind of taken over my garden, so I had to take the weed eater to some of them. I just can't find the time to get out there and pull them.

** The new Dollar General is pretty cool! Malinda and I went last night just to look around. It's so much bigger. All I bought was a couple of binders for my craft ideas, and cookbooks. I can't see myself going there too much though, because it would just be one more time I'd have to get Tyler in and out of his car seat.

** We haven't gotten a break from the heat yet. I'm so ready to get back outside and walk!

** I am in love with the Pioneer Woman's recipes. I have always read her blog, but just recently I have been going back through her old recipes and getting the ones I like printed off for my cookbook. She has soooo many good ones! Tomorrow night, I am trying Ranch Chicken. It is basically a chicken breast, cooked bacon strips on top, and shredded cheddar cheese on top of that. Not good for the diet, but it's sure to taste good!

** I am already browsing Halloween costume ideas. I know it's early, but I was wanting to make it myself, since the store bought ones always look cheap to me. There are so many choices- I wish Martha Stewart was my neighbor! :)

** I finally hung up new pictures of Tyler around the house. The pictures I took down were from his birthday party- so I was a little behind!

** I asked our local Creative Memories consultant about the digital scrap booking. She said in August the software will be 1/2 off- so in other words, I will be starting digital scrap booking in August! Just don't have the time for the paper scrap booking... maybe one day.. like when I have grand kids I will have the time :)

One Heck of a Girl

I was reading MSN this morning and saw a story about a 8 year old girl that wanted to raise $300 to give people in other countries clean water. She wanted people to donate money instead of give her gifts for her birthday- you tell me how many kids would do that?!

But right before her birthday she died in a car crash.

So they made a site for donations to the clean water project she was working towards! Right now they have raised $355,000 dollars- and counting!

Something like this reassures that the world is still full of beautiful things!

The Best Idea Ever!

I get the Pottery Barn Kids magazine in the mail, but I usually don't even look at it, and throw it in the trash. But I did happen to look at the one I got yesterday. And I found that they now have a The Hungry Caterpillar section!




I'm not near as crazy about the bathroom stuff as I am the bedroom. But it's all pretty cute!

A Trip Down Memory Lane

After lunch today, I thought it would be interesting to look back on the old pictures on my blog. It's so hard to remember how small Tyler was. He sure has grown up.

I decided to post a few for you all to look at and remember with me!

Wreath

I bought this wreath from the store in town a couple of weeks ago (can you tell that I LOVED that store??! .. so sad to see them go!!)

It has little sayings on it, which I love! I hung it in the living room.




... I am all caught up on wreathes now! I wanted to get two of each 'season' for when we build on, that way I could put one of the basement door and one on the main door. The side door will just have some kind of wooden sign on it.



for outdoor wreathes, I now have:


  • 2 fall

  • 1 Christmas - still need another one.

  • 2 spring/summer


  • 1 Valentine's Day

for inside ones I have:



  • 1 Easter


  • 1 year round (the one I posted here)

So excpet for 1 more Christmas one, I should be good!

Bible School

Tyler had so much fun playing with his future classmate: Wyatt. Wyatt is almost (within 2 days) older than Tyler.
