Weekend Plans!

I have a BIG random post coming on! I just haven't had the chance to sit down and type it! I feel like I haven't did a random post in forever! It's nothing too exciting- just want to catch you all up on all of the 'boring' stuff in my life! haha!

Friday- Mom and I went to a yard sale this morning- it was so much fun! Tyler came with us too- he is even a morning person! I will post later about what all I bought!

I am going to go to Mom's house to visit after work. Tonight I want to get some spring cleaning done, I already did some last night after Tyler went to bed. I would like to finish the inside stuff tonight and then do the outside stuff tomorrow.

Saturday- Matt is working, so it is just Tyler and me! I want to do some chores outside, do some crafts with Tyler, and enjoy the day!

Sunday- (Happy April Fools :) ....going to church - it is also Palm Sunday- and then no plans! I have a funny menu planned for dinner for April Fools Day- I can't wait to post about it!

Month Plans!

Come Sunday, it will already be April!!! I can't believe it!!

Wish time would slow down for a little while!!

Some plans for our month:



  • Easter!! Love this holiday- or well, I LOVE all holidays!

  • The Egg Hunt! Can't wait!!!!

  • 2 special church services.

  • Family get togethers for Easter- both of which are not planned yet :)

  • My 24th Birthday! I'm not sad of getting 'older'. I don't understand when people complain about turning a year older. I'm just glad to be given another year!

  • A baby/mama get together.

  • My Birthday Dinner at mom's house.

  • A surprise party for Matt's uncle. It is at a local bar- I won't be attending- I don't do the bar thing!

  • Brinktown dinner.

  • Monthly Card Workshop.

  • Earth Day! I have some stuff planned to do with Tyler! I want him to learn at a early age how important this is!

  • A two-day auction. It is at our neighbor's house. We plan on going for some of it.

  • Ladies Night Out!

  • A surprise 40th Birthday Party- same night as ladies night out, but I might go to the end of it.

  • Wedding shower at church for an old friend.

And hopefully lots of walks, enjoying the outdoors, spending time with family, and just enjoying life!

Enoying a Spring Night!

I just love these warm days! Especially when the sun starts to go down and it cools off a bit. Tyler loves to be outside. We actually have to force him to go inside!












Mose likes the outdoors too... wouldn't be the same without Mose...

He loves playing in the sand! Once we get the swing set fixed (Matt will probably get time to work on it next weekend) we're going to make the sandbox in the bottom of the set (there is a spot for it built in already).






Tyler tries to rush to eat dinner so we can go back outside!!

Sure am glad I'm able to spend so much time with Tyler. I need to remind myself how lucky I am for getting to see him so much. It would be so boring without him!!

No-Bake Peanut Butter Cookies

I made some no bake cookies the other night. Can you believe this is only the second time I have ever made them?! The first time was in Home Economics.

I found a recipe for some peanut butter ones. They were really good! I think next time I won't use so much oats. I added more because it didn't look like it had enough. They stayed together good though.

What I like about no-bake recipes is that they are something that Tyler can really help me with. He loves being in the kitchen!!

Here is the recipe!




Adapted from: My Soul is the Sky



2 cups sugar
1/4 cup butter
1/2 cup milk
1 cup peanut butter
1 teaspoon vanilla
3 cups rolled oats (old fashioned) [*Quick oats will make the mixture too gooey]



Directions:



In lg saucepan, mix sugar, margarine, and milk; bring to a full, rolling boil over med heat. (full, rolling boil = large bubbles rising to surface that can't be stirred down).



Boil for one minute, stirring constantly.



Remove from heat and stir in peanut butter and vanilla, stirring until peanut butter is melted; stir in oats.



Working quickly, drop by spoonfuls onto waxed paper covered newspaper.

Crate Seats!

I did it!! I finished the crate seats I found on Pinterest!


The directions are on this blog. I followed all of her instructions. Except I put two pieces of the cushion part - because I liked extra cushion! haha


And I also used a staple gun- not hot glue.


And she messed up and did the opposite side of the crate- I did the correct side, to where you could store toys, etc in the crates.


One more thing, I used partial board my parents had, so it was free- score!


Tyler loves them! He likes standing on them and looking outside!

I wish I could of found different colored crates. But I could always switch them out in the future!





Would be neat to do in kid patterns too!

New Truck & Other Random Stuff!

Mom and Dad got Tyler this truck for Easter (and gave it to him early) He loves it!! He is always playing on the truck at Rata's house, so we they knew he'd like it!




He kept saying "my truck" anytime anyone else would touch it! haha

Got this idea off of Pinterest. Tyler's plates are always so unorganized. I really like this idea to keep them sorted!



Found these organizers in the neighbors trash (which is my aunt and uncle also). They weren't really in the trash .. more like put by the trashcan by the road so someone would take them. Although, I being in the trash can wouldn't stop me! haha!


I never but these because they are about $5 a piece at the Dollar Store, and I'm too darn tight! LOL


They are working good to sort his play food! I had it all in a basket before, but he couldn't really see everything, so this way he can get use of all of his play food!

Double Crunch Honey Garlic Pork Chops

I tried another new recipe for dinner on Sunday! It was really good! I love Chinese food- but I'm not a fan of soy sauce, so I drenched my chop in BBQ sauce to drown out the taste- can you tell from the picture??! :)


It was still good though! And next time I think I will decrease the soy sauce a bit, and then it should be fine!



Adapted from: Rock Recipes


6 center loin pork chops, well trimmed
Sift together:
1 cup flour
2 tsp salt
2 tsp black pepper
1 1/2 tbsp ground ginger
1 tbsp ground nutmeg
1 tsp ground thyme
1 tsp ground sage
1 tbsp paprika
1/2 tsp cayenne pepper

Make an egg wash by whisking together:
2 eggs
4 tbsp water

Season the pork chops with salt and pepper, then dip the chops in the flour and spice mixture. Dip the chop into the eggwash and then a final time into the flour and spice mix, pressing the mix into the chop to get good contact.

Heat a skillet on the stove with about a half inch of canola oil covering the bottom. You will want to carefully regulate the temperature here so that the chops do not brown too quickly on the outside before they are fully cooked on the inside. I find just below medium heat works well. I use a burner setting of about 4 1/2 out of 10 on the dial and fry them gently for about 4 or 5 minutes per side until golden brown and crispy.

Drain on a wire rack for a couple of minutes before dipping the cooked chops into the Honey Garlic Sauce. Serve with noodles or rice.

Honey Garlic Sauce

In a medium saucepan add
2 tbsp olive oil
3 – 4 cloves minced garlic

Cook over medium heat to soften the garlic but do not let it brown.

Add:
1 cup honey
¼ cup soy sauce
1tsp ground black pepper

Simmer together for 5-10 minutes, remove from heat and allow to cool for a few minutes. Watch this carefully as it simmers because it can foam up over the pot very easily.

Pretzel Bottom Peanut Butter Cup Pie

I made this pie on Saturday. I was going to take it to the Visitation pie auction that evening, but I was so paranoid that is wasn't done, since it was still gooey in the middle. So I decided not to take it. I thought it tasted good- and so did Matt & my mom. And when I went to the site where I got the recipe, I was reading the comments and a lot of people were complaining that it didn't seem done, and the blog author replied that it is supposed to be like that. Bummer, I could of took it after all!


At least I know for next time!


It was a good pie- and I would rather have 'cookie' pies than cream/fruit pies. I plan on making it again soon. Maybe for the Catholic Spring Dinner.


Onto the recipe!





Ingredients (1 cookie pie)
2 cups crushed pretzels
1/2 cup granulated sugar
1/2 cup butter, melted Cookie Pie
1 cup butter, room temp
3/4 cup light brown sugar
1/2 cup granulated sugar
2 eggs
2 tsp vanilla
1 tsp baking soda
1 tsp salt
2 1/4 cups white wheat flour (or you can use white)
1 cup milk chocolate chips 1 (8 oz) bag Reese's minis
Instructions
Preheat oven to 350°
Combine crushed pretzels, 1/2 cup melted butter and 1/2 cup sugar in a bowl. Press mixture firmly into the bottom and up sides of a 10" pie or tart pan.
Bake for 8 minutes. Remove from oven.
While crust is baking make the blondie filling.
Cream butter, 3/4 cup brown sugar and 1/2 cup granulated sugar with your mixer.
Add eggs and vanilla and beat until combined and smooth.
On low speed add in your baking soda, salt and flour until incorporated evenly.
Stir in your chocolate chips and Reese's Minis until evenly distributed.
Press mixture on top of baked crust.
Place pie back in oven for 30-35 minutes until just set.
Let cool on wire rack before serving.

Breakfast for Dinner!

I have been in a breakfast mood lately! We have had it a lot for dinner the last few weeks!

The other night, I made french toast, hashbrowns, bacon & eggs!

Tyler loved the french toast!!
My favorite part= the hashbrowns- and they are better with cheese!LOl

The eggs were cooking when I took this picture- they are in 2nd place for me!

Red Velvet Brownies

I feel like I've been cooking/baking like crazy lately! I just have so many recipes I want to try!

Last week I made Red Velvet Brownies. They were very good! The only thing that I will change for next time is I will take them out earlier. I can never tell when to take brownies out, since they harden up when they sit for a while.

Here is the recipe!


Red Velvet Brownies


Adapted from: Newlyweds


1 c butter- at room temp
1 1/2 cups granulated sugar
1 1/2 cups brown sugar
4 large eggs, at room temperature
2 oz red food coloring -I used 1 oz... 2 oz would of made it look blood red- gross. I would like to try sometime making them purple or blue!!
4 tsp pure vanilla extract, divided
2 1/2 cups all-purpose flour
6 tbsp unsweetened cocoa powder
1/2 tsp salt - I skipped the salt!

Preheat the oven to 350 degrees F. Butter and flour an 9 X 13 baking pan.
In the bowl of a stand mixer fitted with the paddle attachment, beat together the butter and sugar on medium speed until light and fluffy, about 2 minutes. Add eggs one at a time, mixing well after each addition, then stir in food coloring and vanilla. Mix flour, cocoa and salt in a separate bowl. Slowly add in the flour mixture and mix on medium-low speed, just until combined. Do not over mix.

Remove the bowl from the mixer and stir up the batter with a rubber spatula once or twice just to ensure all of the flour has incorporated from the sides of the bowl and there isn’t anything stuck on the bottom of the bowl. You’ll want one uniformly colored (red) batter.
Pour the batter into the prepared pan and bake for 30-40 minutes or until a toothpick comes out clean when inserted into the center of the brownies. Set aside to cool, cut into bars and serve.

Next red velvet thing I want to try= Red Velvet Cake Roll!!

Weekend Recap!

Friday- ... hmm... seems so long ago... :)

Mom and I went to get Tyler after work. We stopped by the bank to get his present from them for his birthday! ... a little late, huh?! I've had the card stuck on my fridge since his birthday! LOL ... he picked out a little water gun!

We then headed to Church to check out the Easter decor! I am so excited about the Egg Hunt! I will be posting all of my ideas soon!!


Saturday- Malinda and I had breakfast together at a local restaurant. We then headed to dig up some iris at mom's house! The city is redoing the water lines, so they will probably take out a lot of them. We were able to dig up quite a few!

That afternoon I made a pie (will post more later on that), and played with Tyler!

For dinner, we went to the Eagles for the Visitation benefit. I haven't been out there in a long time (September- long time to me!) It was a fun evening and Tyler enjoyed watching all of the people!

Sunday- went to church- I had nursery also. After church I headed home and was able to get a few projects knocked down around the house! Tyler and I visited my parents and Malinda in the afternoon. And for dinner I made a new pork chop recipe- will post about it later also! Tyler and I walked a few miles around town and then called it a night!
